3 Ways to Eat Cauliflower That Will Make You a Veggie Lover

 I know there are a lot of crazes out there, especially in the world of nutrition but I would be lying if I didn’t LOVE this one!

I feel like cauliflower has received a second lease on life and I’m personally loving it! It could be my favorite comeback in a long time. Cauliflower, you are no longer just another veggie! 

1. Cauliflower rice

No need to make it difficult! I love the frozen cauliflower rice options that are out on the shelves now. It just doesn’t get any more convenient and healthy!  

  • My favorite way to eat cauliflower rice is with herbed goat cheese crumbles, baby spinach, and flaked wild salmon mixed throughout

  • You can add any lean protein you love. My personal favorite: tofu sautéed in garlic and olive oil topped with grated parmesan. Ahhhhmazing!

  • Have you tried cauliflower fried rice? There are many different recipes online to try it out. I sauté some onions first (I like to brown them a bit), then add some crushed garlic, chopped carrots, and cauliflower rice with sesame oil and sauté it all together. Then, I add an egg, chopped tofu or chicken, and then a bit of low sodium soy sauce (to your own taste). Delish! 

Roasted Cauliflower Dippers  

It is SO easy and fairly traditional but you can literally create any flavor profile you want- that’s the fun twist! Whatever you're in the mood for, these roasted (sometimes a little crunchy) cauliflower pieces are the perfect vehicle for whatever flavor you love. 

  • Lay frozen or fresh cauliflower pieces on a baking sheet, drizzle with olive oil and ground black pepper and bake until browned and a little crispy. Where you go for the gold is the dipping sauce! Pesto, curry... whatever you're feeling!

Cauliflower Frittata

Omelettes and frittatas are already a favorite, but when I discovered I could make the most SATISFYING loaded frittata with my leftover cauliflower rice... oh my. I may have eaten frittatas for dinner for a week!

  • Adding cauliflower rice to your frittata will be life changing; it increases the volume of your meal and adds a delicious flavor/consistency without increasing the calories which means YOU get to focus on the toppings and well, toppings are everything!
  • Queue your favorite cheese: Goat? Feta? Maybe add some sundried tomatoes, caramelized onions and spinach? Simply add your favorites and enjoy!
